Ayam Pansuh/Chicken
Bamboo Recipe
Chicken in Bamboo or
usually know as “Ayam Pansuh” is exotic food that very popular in Sarawak.
Ingredients (Marinate) :

½kg chicken
·
Gingers
·
Onions, Garlics
·
Lemon grass
·
Cassava leaves
·
Salt
·
Young bamboo
Optional Ingredents :
·
Turmeric stump
·
MSG
·
Fermented durian
·
Black pepper
Method :
1. Before
using the bamboo, fill it with water for ½ -1 hour to clean the inside and
encourage the water to seep in.
2. Marinate
all the ingredients together. Leave some of tapioca leaves to cap the bamboo
later on.
3. Emptied
the water from the bamboo. Fill it with the marinated chicken.
4. Do
not compact all chicken. Let it loose lightly.
5. Do
not forget to cap the bamboo with tapioca leaves.
6. Cook
over pit fire-charcoal or stand about 60-80 degree.
7. Pansuh
is cooked if the water start to gurgle at the cap.
8. Serve
the pansuh into the bowl.
